No, this isn’t a “We are with you in these difficult times” message. Though we are. But that’s not why we’re writing.
Listen, you’ve tried. You’ve made the best of the situation. You’ve even learned how to bake bread from your own starter. You’ve made stock in your studio apartment. You’ve made three bouillabaisse so far. Amazon Primed an immersion circulator. Bravo. We get it.
But let’s face it, you’re sick of your own shit. And you haven’t had a Gastronauts dinner in god knows how long and you neeeeeeed it.
So what, you say? What can you possibly do to satisfy that itch? Well, we’re cooking up an evening. It’s going to be weird. It’s going to be on Zoom. You’re going to have to shower and dress up (sorry). And you’re going to have to complete a few steps on your own, but:
Here’s how this is going to go down. If you live in Brooklyn, Manhattan, or Queens, all you need to do is order; Palo Santo will deliver an amazing dinner (requiring some marginal prep) — for one, for two, and with wine if you want. Palo Santo will let you know what time during the day on Thursday the 30th they’ll drop it off — they’re pros at contactless delivery.
We encourage you to splurge, because, 1) WTF else are you doing to spend money on at the moment? And 2) You’re helping a small and very-very-worthy NYC restaurant survive. Nobody wants a New York without Palo Santo. There almost couldn’t be a Gastronauts Club without Chef Jacques. So, step up and order some wine, too. Buy a friend elsewhere dinner.
Next, you gotta shower. Maybe cut your hair. Put on your finest. Curate your Zoom background. Deal with your scopophobia.
Then, you’ll read Jacques’ instructions. Fire up your stove. Open two bottles of wine. And at 7pm, get on the Zoom with Chef Jacques and we’ll all finish cooking the dishes together.

How does one recover from a blow like that? Well, as they say: Get right back on the horse after you fall off. And so, we rode straight up to Montreal, trotted into Jean Talon Market to visit a special meat vendor with a special section with a special something. We horsed around in Monreal for a couple of nights and then crossed the border back to the U.S. with a very large cooler full of goodies.
And it’s now here. In a secret location. In Brooklyn. Just waiting for one of our favorite chefs to serve up for us. (That ought to be enough for you to figure out what we got this month. Phone a friend if you need more help.)
Oh, it’s going to be so delicious! Chef ‘Le Cavalier’ has come up with an amazing menu, boasting a phenomenal tartare (we’ve had it before and it’s stellar), a roast with some soon-to-be-illegal foie gras, and a Cowboy confit. As always, there’ll be copious wine and other beers. So, call up your friends, dress in your finest, and gidduyp to RSVP!
